Ingredients

Quantity Ingredient
125g butter
110g sugar
1 egg
1 teaspoon cinnamon
80g sesame seeds, toasted
60g sultanas
150g wholemeal flour, sifted

Method

  1. Cream butter with sugar until light and fluffy. Add egg and beat well. Stir in remaining ingredients and blend well.
  2. Spread mixture in a greased 28 × 19 cm lamington tin. Bake in a preheated moderate oven (180°C) for 20 minutes. Remove from oven, cut into fingers and allow to cool in tin.

Note

  • To toast sesame seeds, heat a dry frying pan until moderately hot, add sesame seeds and stir for 1–2 minutes until toasted and golden brown.
