Ingredients

Quantity Ingredient
500g strawberries, hulled
sugar
250g raspberries
190ml cream
glace violets, to decorate
or slivers candied angelica, to decorate

Method

  1. Place two-thirds of the strawberries in a glass serving bowl and sprinkle with sugar to taste. Sieve remaining strawberries with raspberries or purée in a blender or food processor.
  2. Spoon purée over whole strawberries and chill until serving time. When ready to serve, whip cream and spread over fruit, masking it completely. Decorate with candied violets or slivers of angelica.

Note

  • If fresh raspberries are not available, use frozen raspberries.
