An excellent sauce for pasta, gnocchi, grilled meats and green vegetables.

Ingredients

Quantity Ingredient
3 tablespoons olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 stick celery, finely chopped
2 garlic cloves, crushed
1 sprig fresh marjoram, finely chopped
or 1/2 teaspoon dried marjoram
few sprigs parsley, finely chopped
1kg ripe tomatoes, chopped
freshly ground black pepper
1/2 teaspoon sugar
salt

Method

  1. Heat olive oil in a saucepan and add onion, carrot, celery, garlic, marjoram and parsley. Cook over low heat until golden.
  2. Add tomatoes and season with salt, pepper and sugar. Simmer until tomatoes have turned almost to a purée. Push through a sieve or blend in a blender or food processor and then sieve.
