Ingredients

Quantity Ingredient
125g ghee or butter
110g sugar
125g fine semolina, sifted
35g plain flour, sifted
1 teaspoon ground cardamom

Method

  1. Cream ghee or butter with sugar until light. Add semolina, flour and cardamom and mix well. Leave for 30 minutes.
  2. Take a scant tablespoon of mixture, roll into a ball, then flatten slightly and put on an ungreased baking tray. Repeat with remaining mixture, leaving a little space around biscuits. Bake in a preheated slow oven (150°C) for about 30 minutes or until pale golden. Cool on a wire rack.
