Makes
Sufficient for a breast of 1 × 6 kg turkey, or 2 chickens or boned shoulders of veal

Use for turkey, chicken and veal.

Ingredients

Quantity Ingredient
1 onion, finely chopped
1 tablespoon butter
500g minced pork or sausage mince
1 tablespoon parsley, chopped
1 teaspoon dried sage
good pinch ground mace
80g fresh white breadcrumbs
freshly ground black pepper
salt

Method

  1. Cook onion in butter until soft, then add meat and cook, stirring and breaking down lumps with a fork, until meat changes colour. Remove from heat and lightly mix in remaining ingredients. Cool before using.
