Ingredients

Quantity Ingredient
500g new or waxy potatoes
6 sticks celery, cut into julienne strips
125ml cream
freshly ground white pepper
1 tablespoon lemon juice
1 thick slice ham, cut into thin strips
2 tablespoons mixed fresh herbs, chopped
salt

Method

  1. Boil potatoes in their skins in salted water until just tender. Drain and, when cool, peel and cut into thick slices. Add celery. Whip cream until thick, season well with salt and pepper and stir in lemon juice. Add to potato and celery and mix gently but thoroughly. Arrange in a salad bowl. Sprinkle ham strips and herbs over salad. Chill until ready to serve.
