Meatball and spinach soup

Ingredients

Quantity Ingredient
2 litres beef or chicken stock
1 leek, finely sliced, (white part only)
or 8 spring onions, finely sliced
1 teaspoon fresh ginger, finely chopped
2 tablespoons chinese rice wine or medium-dry sherry
6 tender spinach leaves, finely sliced
salt and freshly ground black pepper

Meatballs

Quantity Ingredient
250g lean minced beef
4 shallots, finely chopped
1 teaspoon fresh ginger, finely chopped
1/2 teaspoon salt
1 tablespoon cornflour
1 tablespoon light soy sauce
1 egg

Method

  1. Place soup ingredients in a large saucepan. Bring to the boil and simmer for 5 minutes.
  2. To make meatballs, mix ingredients and form into small, marble-size balls. Drop into simmering soup and cook for a further 6–8 minutes or until meatballs are cooked through.
