Mandarin stuffing for goose

Ingredients

Quantity Ingredient
250g chestnuts
60g butter
60g celery with leaves, diced
3 mandarins
250g commercial bread stuffing
1/2 teaspoon poultry seasoning
555g rice, cooked
125ml chicken stock or water

Method

  1. Cut a cross in flat side of each chestnut. Boil in water to cover for 20 minutes or until tender. Shell, peel and chop. There should be about 1 cup. Melt butter in a frying pan, add celery and cook over medium heat for about 10 minutes.
  2. Meanwhile, peel mandarins, removing white membranes. Cut segments in half and remove seeds. Combine the mandarins, bread stuffing, chestnuts, poultry seasoning, rice and stock. Add cooked celery and butter and mix together lightly with a fork.

Note

  • Tinned chestnuts may be used instead of fresh. Just drain and chop.
