Ingredients

195g sago
750ml water
2 lemons, zested
3 lemons, juiced
3 tablespoons golden syrup
3 tablespoons sugar

Method

  1. Soak sago in water for 30 minutes, then add remaining ingredients and pour into a saucepan. Bring to the boil, stirring, and simmer until quite thick. Pour into a mould. Cool and chill. Serve with cream or custard.
