Ingredients

Quantity Ingredient
1 onion, finely chopped
1 apple, peeled, cored and chopped
1 garlic clove, crushed
60g butter
6 juniper berries, crushed
500g sauerkraut, rinsed if necessary
1 teaspoon celery seeds
250ml chicken or beef stock
250g plain yoghurt
or 250g sour cream

Method

  1. Cook onion, apple and garlic in butter in a flameproof casserole over low heat until soft. Add juniper berries, sauerkraut, celery seeds and stock and simmer for 2–3 minutes. Cover, reduce heat to very low and cook for 45–60 minutes, or cook in a preheated slow oven (150°C).
  2. Stir in yoghurt or sour cream just before serving. Serve hot as an accompaniment to grilled pork chops or sausages.
