30g fresh watercress
2 spinach leaves
7g fresh tarragon, chervil or parsley
1 teaspoon lemon juice
250g * mayonnaise [rid:4557]

Method

  1. Simmer greens in unsalted water for 2 minutes. Drain and rinse in cold water. Press out water, then pound in mortar until greens are reduced to a pulp, or purée in blender. Add lemon juice and combine mixture with mayonnaise. Use with vegetable or fish salads.
