8 sausages
1 large onion, chopped
30g celery, diced
1 cooking apple, peeled, cored and diced
1 garlic clove, crushed
1-2 tablespoons curry powder
2 tablespoons plain flour
2 teaspoons tomato paste
500ml chicken stock
freshly ground black pepper
salt

Method

  1. Prick sausages, place in a baking dish and bake in a preheated moderately slow oven (160°C) for 15–20 minutes or until well cooked. Drain sausages, reserving 3 tablespoons fat.
  2. Place fat in a saucepan and fry onion, celery, apple and garlic until soft. Add curry powder and fry for 2 minutes. Blend in flour and tomato paste, then add stock gradually, stirring constantly until boiling. Season with salt and pepper.
  3. Add sausages to sauce and simmer until heated through. Serve with fluffy boiled rice and simple store cupboard accompaniments such as sultanas, chutneys and cashews.
