Ingredients

Quantity Ingredient
2 oranges
3 heads chicory, cut diagonally into 6 mm slices
2 carrots, grated

Vinaigrette dressing

Quantity Ingredient
2 tablespoons olive oil
1 tablespoon walnut oil
1 tablespoon vinegar
1 teaspoon dijon mustard
pinch sugar
freshly ground black pepper
salt

Method

  1. Remove peel and pith from oranges and cut between membrane to remove segments. Combine chicory slices, orange segments and carrot in a salad bowl.
  2. To make vinaigrette dressing, whisk together ingredients. Add to salad and toss well.
