1kg salsify roots
60g butter
freshly ground black pepper
salt
parsley, finely chopped

Method

  1. Wash the roots, then thinly peel; drop them into a bowl of acidulated water to prevent discolouration.
  2. Pre-cook the salsify by dropping the prepared vegetable, cut into lengths of about 5 cm, into boiling salted water and cook for 20–25 minutes. Drain, then finish as desired.
  3. Heat butter in frying pan and cook salsify for about 10 minutes, turning often, until golden. Season with salt and pepper and toss with chopped parsley.
