Ingredients

320g beetroot, cooked and diced
250g sour cream
2 tablespoons cream
2 tablespoons lemon juice
2 tablespoons onion, grated
2 tablespoons pickled horseradish, drained and grated
1 teaspoon salt
230g apple, peeled and diced
140g tender celery, diced
shallots, cut into fine julienne strips, to garnish
or chives, snipped, to garnish

Method

  1. Combine beetroot with sour cream, cream, lemon juice, onion, horseradish and salt in a salad bowl. Add apple and celery, then toss together well. Cover and chill salad for 1 hour before serving. Garnish with shallots or chives.
