Beer or cider sauce with sultanas

To serve with hot or cold ham or smoked tongue.

Ingredients

Quantity Ingredient
55g brown sugar
1 tablespoon cornflour
large pinch salt
250ml cider or beer
30g sultanas
8 cloves
8cm cinnamon stick
15g butter

Method

  1. Mix brown sugar, cornflour and salt in a small, heavy saucepan. Stir in cider or beer and add sultanas. Tie spices in a bag and add them. Boil gently for 10 minutes, stirring often. Remove spice bag and swirl in butter. Serve immediately.
