Baked sausage, cabbage and apples

500g sausage mince
1 small onion, finely chopped
3 tablespoons vinegar
2 tablespoons brown sugar
freshly ground black pepper
1/2 small cabbage, finely shredded
3 cooking apples, peeled, cored and thinly sliced
nutmeg
salt

Method

  1. Shape sausage mince into 8 flat patties and brown quickly on both sides in a greased frying pan. Remove patties.
  2. Add onion to fat in pan and brown lightly. Add vinegar, sugar, ½ teaspoon salt and a grinding of pepper, and remove from heat.
  3. Arrange alternate layers of cabbage and apple in a greased casserole dish, seasoning each layer with salt, pepper and nutmeg. Place sausage patties in a single layer on top and pour vinegar mixture over.
  4. Cover and bake in a preheated moderate oven (180°C) for 40 minutes. Uncover and bake for 10 minutes longer. Serve with buttered noodles.
