This recipe was created at Antoine’s, one of the long-established and famous restaurants of New Orleans.

Ingredients

Quantity Ingredient
125g butter
6 tablespoons fresh spinach, finely chopped
3 tablespoons onion, finely chopped
3 tablespoons parsley, finely chopped
3 tablespoons celery, finely chopped
5 tablespoons fresh breadcrumbs
dash tabasco sauce
1/2 teaspoon salt
36 freshly opened oysters, on the half-shell
rock salt

Method

  1. Melt butter in a saucepan and add all ingredients except oysters and rock salt. Cook, stirring constantly, for 15 minutes or until soft. Press through sieve or purée in blender. Cool.
  2. Place a layer of rock salt in shallow ovenproof dishes and arrange oysters in half-shells on top. Place a spoonful of sauce on top of each oyster. Cook under a preheated medium grill until sauce begins to brown. Serve immediately.
