220g sugar
125ml water
500g short rhubarb pieces
1 teaspoon orange zest

Crumble topping

Quantity Ingredient
150g plain flour
60g butter
55g sugar

  1. Dissolve sugar in water over heat to make a syrup. Bring to the boil, then add rhubarb and orange zest. Cover and simmer for 5 minutes or until rhubarb is tender but not mushy. Turn into greased ovenproof dish.
  2. To make the crumble topping, sift flour into a bowl and rub in butter until mixture resembles crumbs. Mix in sugar and cinnamon. Sprinkle topping over fruit.
  3. Bake in a preheated moderate oven for 30 minutes or until crumble is golden brown.
