6 bananas
125ml rum
50g dry breadcrumbs
60g butter
3 tablespoons redcurrant jelly

Method

  1. Macerate bananas in rum for 1 hour. Drain, reserving rum.
  2. Roll bananas in breadcrumbs and fry in butter until golden.
  3. Meanwhile, heat rum with redcurrant jelly, stirring until thick and smooth. Spoon sauce over bananas to serve.
