90g roquefort cheese
185g cream cheese
2 eggs
170ml cream
freshly ground black pepper
pinch nutmeg
1 x 20-23 cm shell * plain shortcrust pastry [rid:5323]
salt

Method

  1. Beat cheeses with eggs and beat in cream gradually. Season with salt, pepper and nutmeg. Spoon into flan case.
  2. Bake in a preheated hot oven (200°C) for 10 minutes, then reduce heat to moderate (180°C) and bake for a further 20 minutes.
