Ingredients

6 quail
freshly ground black pepper
60g butter
125ml dry white wine
1/2 lemon, juiced
90g sultana grapes, stalks removed
salt

Method

  1. Season quail lightly with salt and pepper. Heat butter in a shallow flameproof casserole and cook quail until lightly brown all over.
  2. Add wine and lemon juice, cover and cook over low heat for about 15 minutes. Add grapes and cook for about 5 minutes longer. Reduce sauce over high heat if necessary.
