30g butter
8 spring onions, finely chopped
2 eggs
250ml cream
1 tablespoon chives, snipped
1 tablespoon watercress, chopped
1 tablespoon parsley, chopped
freshly ground black pepper
1 x 20 cm shell * plain shortcrust pastry [rid:5323]
salt

Method

  1. Melt butter in a frying pan and sauté spring onions lightly. Beat together eggs and cream, and stir in spring onions, herbs, salt and pepper.
  2. Pour into a flan case. Bake in a preheated moderately hot oven (190°C) for 30–40 minutes or until filling is set.
