Ingredients

1kg old potatoes, peeled and finely sliced
1 garlic clove, halved
90g butter
freshly ground white pepper
250ml milk
60g gruyere cheese, finely sliced
salt
nutmeg

Method

  1. Dry potato slices thoroughly. Rub a shallow ovenproof dish with cut sides of garlic and smear with 30 g butter. Carefully arrange potato slices in layers in the dish, seasoning each layer with salt and pepper.
  2. Scald milk and add a little nutmeg, salt and pepper.
  3. Arrange cheese on top of potatoes. Carefully pour over milk and add rest of butter, cut into small pieces.
  4. Bake in a preheated moderate oven for 40–45 minutes or until tender and golden. Cut in wedges and serve from the dish.
