A traditional English favourite.

Ingredients

Quantity Ingredient
185g butter
500g raw prawns, shelled, deveined and chopped
1/4 teaspoon ground mace
1/4 teaspoon nutmeg
pinch cayenne
1 teaspoon ground mixed spice
freshly ground black pepper

Method

  1. Melt butter in a large frying pan and add prawns, mace, nutmeg, cayenne, mixed spice and pepper. Toss in butter for a few minutes until cooked.
  2. Spoon prawns and butter into small soufflé dish or 6 individual pots. Press down lightly, then cover with foil and chill overnight. Serve with Melba toast.
