Potatoes in white wine with anchovies

Serve this simple appetiser at room temperature for the best flavour. Perfect for summer brunches.

Ingredients

Quantity Ingredient
6 large, old potatoes
60ml dry white wine
2 tablespoons wine vinegar
80ml olive oil
freshly ground black pepper
100g tinned rolled anchovy fillets, drained
flat-leaf parsley, to garnish
or coriander leaves, to garnish

Method

  1. Place potatoes in a saucepan, cover with cold water and bring to the boil. Simmer until tender. Drain and peel when cool enough to handle. Cut into thick slices and put in a serving bowl. Sprinkle with wine and cool to room temperature.
  2. Combine vinegar, olive oil and pepper and pour over potatoes. Scatter anchovies over potatoes and garnish with coriander leaves or parsley.
