Ingredients

12 plums
750ml water
220g sugar
170ml port
Crème fraîche, to serve
or ice cream, to serve
crisp biscuits, to serve

Method

  1. Wash plums. Place water and sugar in a saucepan and bring slowly to the boil, stirring until sugar dissolves. Boil, without stirring, for 5 minutes.
  2. Add port and plums and poach gently for about 5 minutes or until plums are tender. Remove plums and set aside.
  3. Boil the syrup until it is reduced by about one-third, then pour over the plums. Chill. Serve in a glass bowl with crème fraîche or ice cream, and a crisp biscuit.
