An impressive dinner party dessert.

Ingredients

Quantity Ingredient
6 peaches, peeled, halved, stoned and poached
or 1 large tin peach halves
1/2 teaspoon arrowroot
60ml brandy
60g slivered almonds, toasted
ice cream, to serve

Method

  1. Pour 125 ml peach syrup (from poaching or tin) into top of chafing dish or pan and bring to the boil.
  2. Blend arrowroot with a little cold water, stir into syrup and stir until slightly thickened. Add peaches and baste with syrup until heated through.
  3. Warm brandy, ignite and pour over peaches. Top with almonds and serve with ice cream.
