Pasta with basil sauce

Ingredients

Quantity Ingredient
500g fettucine or spaghetti
30g parsley, chopped
30g fresh basil, chopped
1/2 garlic clove, chopped
125ml olive oil
250g ricotta cheese
pinch cayenne
parmesan cheese, grated

Method

  1. Cook pasta in boiling salted water until al dente.
  2. Meanwhile, combine parsley, basil and garlic in a mortar. With a pestle pound them into a paste. Gradually work in oil and cheese, then season with cayenne. (This can also be done in a blender or a food processor fitted with a steel blade.)
  3. Drain pasta and place in a heated serving dish. Add sauce and gently mix. Serve immediately. Offer some grated parmesan cheese for topping.
