Ingredients

185g cream cheese
125g butter
1/2 teaspoon natural vanilla extract
1/2 teaspoon natural peppermint extract
750g icing sugar, sifted
60ml hot water
125g dark cooking chocolate, melted

Cake

60g butter
3 eggs
335g plain flour
1 1/2 teaspoons bicarbonate of soda
1 teaspoon salt
190ml milk

Method

  1. To make chocolate frosting, beat together cheese, butter and extracts, blending well. Beat in half icing sugar, then add remaining icing sugar alternately with hot water. Blend in melted chocolate and mix until smooth.
  2. To make cake, blend butter with 500 g of the chocolate frosting. Add eggs, one at a time, and beat for 1 minute.
  3. Sift flour, bicarbonate of soda and salt, and stir into the creamed mixture alternately with milk, beginning and ending with dry ingredients.
  4. Spoon into 2 greased and lightly floured 20 cm round sandwich tins. Bake in a preheated moderate oven for 30–40 minutes. Turn out onto wire rack and cool.
  5. Sandwich cake together with a little of the remaining frosting or jam. Decorate by spreading rest of frosting over top and sides.
