Cannelloni with cheese and ham stuffing

Ingredients

130g pre-cooked cannelloni tubes
oil
150g parmesan, grated, plus extra to serve

Filling

185g ricotta cheese, sieved
250g mozzarella cheese, grated
60g ham, chopped
2 eggs
salt and freshly ground black pepper

Sauce

Quantity Ingredient
90g butter
4 large, ripe tomatoes, peeled, seeded and chopped
1 tablespoon fresh basil, chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Method

  1. If not using pre-cooked cannelloni, cook in boiling salted water, with a little oil added, for 5 minutes or until tender but firm. Rinse in cold water and drain.
  2. To make filling, mix all ingredients together and spoon into cannelloni. Arrange cannelloni side by side in a buttered shallow ovenproof dish.
  3. To make sauce, heat half the butter in a heavy saucepan and add tomatoes, basil, salt and pepper. Simmer, covered, for 15 minutes.
  4. Spoon sauce over cannelloni, sprinkle with parmesan cheese and dot with remaining butter. Bake in a preheated moderately hot oven for 15 minutes. Serve very hot, and pass a bowl of grated parmesan cheese separately.
