Choose small, new potatoes of uniform size with pearly skins.

Ingredients

Quantity Ingredient
500ml water
500g new potatoes, lightly scraped
pinch salt
2 small sprigs fresh mint, (optional)
30g butter
1 tablespoon fresh mint, finely chopped
or 1 tablespoon parsley, finely chopped
or 1 tablespoon dill, finely chopped

Method

  1. Bring water to the boil in a saucepan, add potatoes, salt and mint sprigs, if using, and return to a gentle boil. Cover and cook gently for 10–15 minutes, depending on size of potatoes. Drain immediately.
  2. Return potatoes to saucepan and shake over low heat until quite dry. Add butter and toss potatoes until each is glistening. Place in heated serving dish and sprinkle with chopped mint, parsley or dill.

Note

  • Omit sprigs of mint in cooking water if garnishing with chopped parsley or dill.
