An easily made tea bread, delicious eaten still warm, with butter. Eat one loaf and freeze the other.

Ingredients

Quantity Ingredient
450g self-raising flour
1/4 teaspoon salt
1 tablespoon orange zest, grated
165g sugar
1 egg
60ml orange juice
310ml milk
3/4 tablespoon butter, melted
90g walnuts, chopped, (optional)

Method

  1. Sift flour and salt into a bowl and stir in orange zest and sugar.
  2. Beat together egg, orange juice, milk and melted butter and stir in nuts, if using. Pour onto flour mixture and combine ingredients with a few swift strokes, stirring lightly until just blended. Pour into two 20 × 10 cm loaf tins.
  3. Bake in a preheated moderate oven for 40–50 minutes or until a skewer inserted in centre comes out clean. Cool on wire racks.
