Ingredients

185g butter
230g caster sugar
3 eggs
3 tablespoons orange marmalade
375g self-raising flour, sifted
1/4 teaspoon salt
2 oranges, zested
125ml fresh orange juice, strained

Method

  1. Cream butter with sugar until light and fluffy. Add eggs, one at a time, beating thoroughly. Stir in marmalade. Add flour and salt alternately with orange zest and juice. Spoon into a greased and lined 20 cm round deep cake tin.
  2. Bake in a preheated moderate oven for 30–40 minutes or until a fine skewer inserted in centre comes out clean. Turn out, cool on a wire rack.
