1 quantity * rich shortcrust pastry [rid:4692]
8 onions, sliced
125g butter
freshly ground white pepper
2 tablespoons plain flour
500ml beef stock
2-3 tablespoons parmesan cheese, grated
salt

Method

  1. Line 6 × 10 cm tartlet tins with pastry, prick well and bake blind.
  2. Cook onions gently in half the butter until soft. Increase heat a little and cook until a rich, even brown, stirring occasionally. Season with salt and pepper and remove from heat.
  3. Melt remaining butter in a saucepan, stir in flour and cook over medium heat for 5–6 minutes or until flour turns nut brown. Gradually add stock and simmer, stirring, for 5 minutes. Mix in onions and spoon mixture into pastry cases.
  4. Mix cheeses together and sprinkle over the top. Bake in a preheated very hot oven for 5–10 minutes, or cook under a preheated hot grill, until cheese melts and colours slightly.
