Dried fruit salad is prepared throughout the Middle East, using apricots, raisins and nuts; or balancing the sharpness of apricots with the sweetness of prunes. Prepare a day or two in advance and make enough to eat over a few days; it improves with age.

Ingredients

Quantity Ingredient
500g dried apricots
250g prunes
250g raisins or sultanas
80g blanched almonds
50g pine nuts
165g sugar
2 tablespoons orange-flower water or rosewater

Method

  1. Put all ingredients in a large bowl. Add water to cover, stir, cover and put in refrigerator for 1–2 days. Serve chilled with sour cream sweetened with a little brown sugar.
