Ingredients

Quantity Ingredient
15g butter
2 bacon rashers, rind removed
3-4 fresh oysters
2 eggs, lightly beaten
freshly ground black pepper
salt

Method

  1. Heat butter in a frying pan, add bacon and fry until cooked but not crisp.
  2. Place the oysters on top of the bacon and carefully pour the eggs over them. Season with salt and pepper. Cook without stirring until the eggs set.
  3. Turn the omelette out upside-down onto a warm plate and serve immediately.
