Ingredients

Quantity Ingredient
150g plain flour
4 teaspoons baking powder
2 teaspoons ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon salt
100g one-minute oats
40g butter
2 teaspoons honey
60ml warm water
80ml milk

Method

  1. Sift flour, baking powder, spices and salt into a bowl. Add oats and rub in butter.
  2. Mix honey, water and milk, blending thoroughly. Pour into dry ingredients and mix to a soft dough.
  3. On a floured surface, lightly pat dough into a round about 2.5 cm thick. Cut into rounds using a scone cutter or sharp knife. Place on an ungreased baking tray and bake in a preheated very hot oven for 10–12 minutes. Serve warm with butter and ginger marmalade or apricot jam.
