Fluffy omelette

Ingredients

3 eggs, separated
2 tablespoons hot water
freshly ground black pepper
15g butter
salt

Method

  1. Beat egg yolks and water together until pale yellow. Beat egg whites until they form soft peaks, and fold in yolk mixture. Season with salt and pepper.
  2. Heat butter in a small heatproof omelette pan. Pour in egg mixture and cook until golden brown underneath.
  3. Place pan under a preheated hot grill and cook for a few minutes until golden brown on top.
  4. If using a filling, spoon onto half of omelette, fold other half over and slide out of pan onto a heated plate. Serve immediately.

Variations

  • Fluffy bacon omelette: Make fluffy omelette and fill with 2 rashers bacon, crisply fried and crumbled, before folding.

    Fluffy herb omelette: Make fluffy omelette and sprinkle with 2 tablespoons finely chopped parsley or other fresh herbs before folding.

    Fluffy salmon omelette: Make fluffy omelette and fill with 2 tablespoons flaked smoked salmon or smoked fish before folding.

    Fluffy ham and cheese omelette: Make fluffy omelette and fill with 2 tablespoons chopped ham, plus 30 g grated cheese, before folding.

    Fluffy mushroom omelette: Make fluffy omelette and fill with 3–4 sliced mushrooms, cooked in a little butter, before folding.

    Fluffy tomato omelette: Make fluffy omelette and fill with 1 tomato, peeled, sliced and cooked in a little butter with a few onion slices and chopped fresh herbs, before folding.
