Ingredients

8 chicken joints or breasts
60ml olive oil
250ml fresh orange juice, strained
250ml dry white wine
60g raisins
80g blanched almonds, chopped
1 tablespoon sugar
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon freshly ground white pepper
30g butter

Method

  1. Brown chicken joints in hot oil, then place in a shallow baking dish. Combine remaining ingredients, except butter, and pour over chicken. Bake in a preheated moderate oven for about 30 minutes or until tender, basting frequently.
  2. Remove chicken to a heated serving platter. Heat sauce, boiling to reduce it if necessary, and swirl in butter. Pour sauce over chicken. Serve with boiled rice and a green salad.
