A marvellous combination of smetna (the Russian name for sour cream) and brown sugar makes the difference in this dessert. Equally good when used with peaches.

Ingredients

Quantity Ingredient
165g brown sugar
375g light sour cream
8 large ripe yellow nectarines, stoned and sliced
flaked almonds, toasted, to decorate

Method

  1. Combine sugar and sour cream. Spoon alternate layers of cream and fruit into a dessert bowl or soufflé dish. Cover and chill for 2 hours. Sprinkle with flaked almonds before serving.
