White wine and mustard sauce

For sausages, ham steaks or pork chops.

Ingredients

Quantity Ingredient
15g butter
2 tablespoons spring onions, chopped
80ml white wine
80ml cream
1 tablespoon french mustard
freshly ground black pepper
salt

Method

  1. Cook sausages or chops with just enough oil to film pan. Remove meat to a hot dish and slowly pour off fat from pan. Melt butter in pan, add spring onions and cook gently for 2 minutes.
  2. Add wine and bring to the boil, stirring and scraping up brown bits from bottom of pan.
  3. Stir in cream and mustard and cook gently for 1–2 minutes or until sauce becomes glossy and a little thicker. Season with salt and pepper and spoon over chops or sausages.
