125g butter
110g sugar
natural vanilla extract

Method

  1. Cream butter with sugar until light and fluffy (this may be done by hand or with an electric beater). Pour in about 250 ml cold water, give a light beat, then pour off water. Beat again, pour on more water, beat lightly then pour off water. This is repeated until mixture is light and fluffy and there are no sugar grains left in the cream. Flavour with vanilla. Use to fill cakes, buns, etc.
