For all meats.

Ingredients

Quantity Ingredient
250ml water
250ml wine, (see note)
6 peppercorns
1 bay leaf
8 cloves
1 onion, finely sliced
1 tablespoon fresh rosemary, thyme or marjoram
or 1 teaspoon dried rosemary, thyme or marjoram, crushed

Method

  1. Combine all ingredients.

Note

  • Dry white wine will give a more delicate flavour, but for red meats and game or venison, dry red wine is preferable.
