Tomato salad with Dijon dressing

Ingredients

Quantity Ingredient
4 firm ripe tomatoes
freshly ground black pepper
3 tablespoons olive oil
2 teaspoons dijon mustard
1 teaspoon lemon juice or wine vinegar
6-8 spring onions, chopped
parsley, chopped
or chives, chopped
salt

Method

  1. Cut tomatoes crossways into thin slices (use serrated-edge knife) and arrange overlapping on a flat dish or 4 individual plates. Season well with salt and pepper.
  2. Mix oil, mustard and lemon juice or vinegar, beating with a fork or shaking in a jar until thick and creamy. Sprinkle over tomatoes.
  3. Drop spring onions into boiling water, blanch for 10 seconds and refresh under cold water. Pat dry with paper towels. Strew over tomatoes with some parsley or chives.
