Stuffed grilled mushrooms

Ingredients

Quantity Ingredient
8 large cup mushrooms
60g butter
4 spring onions, finely chopped
or 1/2 small onion, finely chopped
1 garlic clove, crushed, (optional)
115g ham, finely chopped
2 teaspoons dijon mustard
pinch nutmeg
20g fresh breadcrumbs
salt and freshly ground black pepper
rounds hot fried bread or buttered toast, to serve
parsley, chopped, to garnish

Method

  1. Trim mushroom stems level with caps and chop stems finely. Melt half the butter and fry stems, spring onions or onion and garlic, if using, until soft. Stir in ham, mustard, nutmeg, breadcrumbs, salt and pepper.
  2. Melt remaining butter, brush skin side of mushrooms and grill them, skin side up, under a preheated grill for 2 minutes. Turn caps over, fill with stuffing and return to grill. Cook until stuffing is heated through.
  3. Place on rounds of fried bread or toast and garnish with parsley. Serve very hot.

Note

  • Finely chopped corned beef, cooked bacon, sausage or chicken livers, tinned luncheon meat or salami may be used instead of ham, and other flavourings such as tomato paste, chutney or Worcestershire sauce may be substituted for mustard and nutmeg.
