Fresh mushroom caps with a savoury stuffing makes a healthy, light hors d’oeuvre.

Ingredients

Quantity Ingredient
20-25 cup mushrooms
parsley leaves, chopped or whole, to garnish

Herb filling

Quantity Ingredient
125g cream cheese
1 tablespoon lemon juice
15g parsley, chopped
15g mixed fresh herbs, chopped
or 2 teaspoons dried herbs mixed with 15 g chopped parsley
freshly ground black pepper
salt

Method

  1. Remove mushroom stems and chop finely. Mix ingredients for filling, adding chopped mushroom stems.
  2. Fill mushroom caps, mounding mixture up, and garnish each with chopped parsley, a parsley leaf or a sprinkle of paprika.

Variations

  • Chicken filling: Mix together 1 boneless skinless chicken breast, cooked and finely chopped; 4 teaspoons mayonnaise; 2 teaspoons chopped parsley or chives; salt and freshly ground black pepper. Use to fill mushroom caps as above.

    Nut filling: Mix together 125 g cream cheese or 250 g ricotta cheese, 30 g chopped toasted almonds, walnuts or pecans; 1 tablespoon finely snipped chives; salt and freshly ground black pepper. Use to fill mushroom caps as above.
