Stir-fried beef with mushrooms

Ingredients

60g dried chinese mushrooms
1 egg white
2 1/2 tablespoons soy sauce
1 teaspoon cornflour
500g lean fillet or rump steak, trimmed of all fat and cut against grain into thin shreds
125ml vegetable oil
125g tinned bamboo shoots, drained and shredded
1 tablespoon red wine
1 teaspoon sugar
1/2 teaspoon salt
sprigs fresh coriander, to garnish

Method

  1. Cover mushrooms with hot water and soak for 20 minutes. Drain. Remove and chop stems and cut caps into fine strips. Mix egg white, soy sauce and cornflour, add shredded beef and marinate for 5 minutes. Drain beef, reserving soy sauce mixture.
  2. Heat 4 tablespoons oil in a wok or frying pan. When it begins to give off a haze add beef and stir-fry over high heat until it changes colour. Remove beef and set aside.
  3. Add remaining oil to wok and heat. Add bamboo shoots and mushrooms and stir-fry over high heat for 1 minute. Return beef to pan and add wine, sugar, salt and reserved soy sauce mixture. Stir-fry for 1 minute and serve hot, garnished with sprigs of coriander.
