Ingredients

Quantity Ingredient
750g minced steak
60ml orange juice
1 egg
120g fresh white breadcrumbs
1 onion, finely chopped
salt
1/4 teaspoon freshly ground black pepper
2 teaspoons parsley, chopped
1/4 teaspoon dried thyme

Topping

Quantity Ingredient
60g tomato paste
80g brown sugar
1/4 teaspoon dry mustard
1/4 teaspoon cinnamon
1/4 teaspoon ground cardamom or cloves
3 slices orange, halved

Method

  1. Combine all meat loaf ingredients and mix well. Lightly pack into a greased 21 × 11 cm loaf tin. Bake in a preheated moderate oven, on the lower shelf, for 30 minutes.
  2. To make topping, combine tomato paste, sugar, mustard and spices and mix well. Place orange slices on top of meat loaf, spoon spice mixture over and bake for a further 30 minutes or until cooked and the top is nicely glazed. Serve hot or cold.
