Mushrooms on croûtes

185g button mushrooms
4 thick slices bread, crusts removed
90g ghee or butter
3 tablespoons parsley, finely chopped
2 garlic cloves, crushed
1 teaspoon lemon juice
freshly ground black pepper
salt

Method

  1. Remove mushroom stems and keep for another dish. Arrange bread slices side by side in a shallow ovenproof dish. Place mushroom caps upside-down on bread.
  2. Melt butter, add parsley, garlic and lemon juice and season with salt and pepper. Spoon butter sauce over mushrooms and bread. Bake in a preheated moderately hot oven for 20 minutes. Serve at once.
